His 2024 Vireton Pinot Gris is a beautifully expressive and vibrant wine. It opens with intense aromatics of lychee, dried stone fruits, and a delicate hint of cardamom. On the palate, juicy acidity takes center stage, seamlessly balanced by subtle pear skin phenolics, adding depth and texture. This layered profile makes it a versatile choice, perfect as a refreshing aperitif or paired with a variety of dishes, from fish tacos to pork schnitzel to a classic hummus plate.

Lead by winemaker Alexis Valette, the Cascavel team works closely with group of dedicated winegrowers. This teamwork ensures that the Elicio collection, from the Latin word elicere, highlights how wine can “elicit” feelings, memories, and pleasure. Made from 100% Rolle, their name for the Vermentino grape, with its tel-tale golden/yellow color. The nose opens with tropical fruit and ripe peach, lifted by citrus zest. On the palate, refreshing acidity meets a soft, rounded texture, finishing with gentle sweetness and a subtle mineral edge. Perfect as an apéritif or served with tapas, salads, grilled white meats, or fresh Mediterranean fish.
  • CANTINE COLOSI, SICILIA BIANCO 2024, SICILY, ITALY $18.99 Since 1987 Cantine Colosi has been producing native Sicilian wines. Consisting of 24 acres of vineyards in Salina, a small island in the Eolian Archipelago, Colosi occupies an area of the island recognized for both its orientation and for the physical-chemical nature of the soil whose volcanic origins are particularly suitable for vine cultivation. The winery is located underground in order to have a constant temperature for the optimum care of the wine and to respect the strict preservation rules of the Eolian archipelago. With three generations of experience, Colosi is led by enologist Pietro Colosi in collaboration with his father Piero. A 50/50 blend of the native varietals Inzolia and Cataratto, it is pale, straw yellow in color with greenish hues. Pleasant bouquet on the nose with flowers and vibrant fruit aromas, like white peach, citrus and exotic fruit. On the palate it is creamy, crispy and juicy, with generous fruit and a lengthy finish.

It now garners attention for the complexity and nuance it brings in the glass, where it has a beautiful shining golden tone, a prelude to rich aromas with hints of exotic fruit and soft spicy notes. It is a complex and beguiling wine on the palate, with good acidity and mineral notes, hints of ginger, orange peel, and even a touch of lemongrass. Thankfully, Pecorino wine pairs very well with Pecorino cheese. There’s something about the salty, nutty-tart cheese and the bracing acidity and fleshy stone fruit of the wine that make them a genuinely great pair. But Pecorino also goes beautifully with fish and shellfish especially when they are cooked over red-hot coals.
